Vegan Recipes That The Whole Family Love

Lemon pasta

This Lemon Pasta is budget friendly, creamy, tangy and ready in just 10 minutes. So easy to make with simple ingredients, you wouldn’t believe it is vegan and you can do this with so little effort. Kids friendly, family approved a keeper with fresh flavor that the whole family will enjoy.

Don’t be shy of garlic, herbs, and spices! Add in some greens, like spinach or asparagus if you’re feeling adventurous.

Ingredients

Produce

  • 3 cloves Garlic

  • 2 tsp Lemon, zest

  • 2 Lemons

Canned Goods

  • 1 cup Coconut milk, full fat

Pasta & Grains

  • 4 cups Pasta

Baking & Spices

  • 1 Salt

Oils & Vinegars

  • 1/4 cup Olive oil

Dairy

  • 1 Parmesan, Vegan


apple nachos

Healthy apple nachos layered with fresh apples, bits of chocolate, coconut flakes, and drizzled with gooey, warm nut butter and sprinkle of cinnamon. Ready in under 5 minutes, apple nachos make a great snack, breakfast or light lunch. They are a well loved classic loved by kids and adults alike!

Ingredients

Produce

  • Apples

  • Shredded Coconut

  • Lemon or Line

Extras

  • Chocolate Chips

  • Peanut Butter (Creamy or crunchy!)

  • Cinnamon

  • Shredded Coconut (Unsweetened or toasted)

Instructions

  1. Wash and dry the apples. Cut them into quarters and remove the core. Slice the quarters into thin slices, about 1/4 to 1/2 inch.

  2. Drizzle lemon or lime juice over the apple, mixing them into the apples so that they don’t brown.

  3. Layer apples on a serving plate.

  4. Top with remaining ingredients. Warm the nut butter and drizzle in a circular motion over the apple slices.

  5. Add toppings in layers. Sprinkle the coconut. Add a dash of cinnamon.

french toast

This is the best and the easiest vegan French Toast you’ll ever make! So fluffy, soft, and sweet, this vegan breakfast classic is made with tofu and ready in 20 minutes. Add in fresh fruits

Tips & Tricks

Making french toast without eggs can happen. It’s possible. Making an eggless french toast recipe is really easy! All you need is a blender, a non-stick pan, and a handful of ingredients. It all comes together in a few steps.

  1. Blend the tofu and the rest of the batter ingredients in a blender until it’s smooth. Pour it into a wide, shallow bowl.

  2. Melt some vegan butter or oil in a pan over medium high heat.

  3. Generously dip both sides of the sliced bread in the batter.

  4. Add 1 or 2 battered slices in the skillet to fry. Flip when golden brown, and fry the other side.

  5. Plate the finished french toast with as many toppings as you like and enjoy!

  • 3 Macerated strawberries

  • Fresh Berries

  • Bananas

Baking

  • 1/4 teaspoon salt

  • 1/4 teaspoon black salt (for eggy flavour optional but recommended)

  • 1/2 teaspoon cinnamon

  • 1 tablespoon nutritional yeast

  • 1/2 tablespoon Tapioca starch (flour)

  • 1 teaspoon Baking Powder

  • 1 teaspoon Vanilla

  • 1/2 tablespoon Maple Syrup

  • 1 tablespoon Vegan Butter or Oil, add more as needed

  • 4-6 slices hearty bread of your choice

Extras

  • Powdered sugar

  • Vegan whipped cream

Instructions

  1. Add the tofu and the rest of ingredients (except the bread and oil) to your blender or Nutra Bullet and process until smooth. Pour the batter into a wide shallow bowl and set aside.

  2. Preheat non stick griddle or large non stick skillet to medium high heat. Add oil or vegan butter

  3. Dip both sides of bread generously in the batter, to get a really good coating.

  4. Add battered bread to the skillet and fry for 4-5 minutes per side. Try not to move it while cooking so it develops a nice crust. If pan gets to hot turn down it down to medium heat. Once golden remove from pan and serve immediately. Repeat with rest of bread, add more butter as needed for frying.

  5. Enjoy with maple syrup, sliced bananas, fresh fruit, or Macerated Strawberries or all four!
